The Umami Taste

Umami is a proposed addition to the currently accepted four basic tastes. The umami taste is felt in the presence of monosodium glutamate (sodium salt of glutamic acid) on the tongue. Some claim that umami is the combination of the other four tastes, and others claim that it is a separate, independent taste which is difficult to define. MSG and the brain  Excitotoxicity

Natural glutamate contains 2 amino - acids: glutamic acid and glutamine binding to protein molecules. In the body the molecules are slowly broken into particles and glutamate is produced gradually so it can be absorbed naturally. Industrial glutamate contains significantly higher quantities of glutamate than those existing in foods, and it does not bind to protein molecules, therefore it is a free amino - acid and is absorbed in the body in a significantly faster pace than natural glutamate.

Glutemic acid belongs to a group of chemicals known as excitotoxins. Excitotoxicity is a process in which brain neurons are damaged and destroyed due to over - activity of certain receptors. In an excessive daily intake of glutamate, as happens when the body digests MSG, these amino - acids cross the blood brain barrier and excite the neurons of brain cells to a point of absolute exhaustion. Then those brain neurons die. Can be a cause excitotoxins play a major role in a whole group of degenerative brain diseases in adults (the elderly: Alzheimer/Parkinson/Huntington/ALS).
