Sekundäre Pflanzenstoffe
= Sekundärmetaboliten/= sekundäre Pflanzeninhaltsstoffe/= Phytamine genannt
Bestimmte chemische Verbindungen, die von Pflanzen weder im Energiestoffwechsel, noch im aufbauenden (anabolen) o. im abbauenden (katabolen) Pflanzenstoffwechsel produziert
werden/in speziellen Zelltypen hergestellt/grenzen sich von primären Pflanzenstoffen ab, dass sie für die Pflanze nicht lebensnotwendig sind.
Sekundäre Pflanzenstoffe gehören zu den Naturstoffen und haben einen hohen Stellenwert für den Menschen. Oft werden Pflanzen nur aufgrund dieser Verbindungen angebaut.
Ihre Biosynthesewege fasst man unter dem Begriff Sekundärstoffwechsel zusammen. Sekundärmetaboliten leiten sich von Produkten des anabolen und katabolen Stoffwechsels ab,
hauptsächlich Carbonsäuren, Kohlenhydraten und Aminosäuren. Nicht immer lässt sich der Sekundärstoffwechsel eindeutig abgrenzen. Dies hängt damit zusammen, dass Primär- und Sekundärstoffwechsel häufig gemeinsame Reaktionsschritte und die gleichen Enzymsysteme nutzen. So kann die Entscheidung, ob es sich um ein primäres o. um ein sekundäres
Stoffwechselprodukt handelt, nur
aus der Betrachtung der Funktion, welche die Substanz im pflanzlichen Organismus
hat, getroffen werden. Die wichtigsten Gruppen pflanzlicher
Sekundärverbindungen sind, geordnet nach ihrer chemischen Struktur:
* Isoprenoide Verbindungen: Terpene., Steroide und ihre Glykoside; Carotinoide, Speicherlipide
* Alkaloide.: (Cofein/Nicot.)
* Aminosäuren wie Alliin oder Canavanin
* Chlorophyll obwohl nur in photosynthetisch aktiven Pflanzenteilen produziert wird,
* Flavonoide (Malus-m.)
Flavones are phenolic
structures containing one carbonyl group. The addition of a 3-hydroxyl group
yields a flavonol.
Cannabinoide, Menthol, das Krebsmedikament Taxol Vanillin.
Flavonoids are hydroxylated phenolic compounds but occur as a C6 - C3
unit linked to an aromatic ring (Marjorie, 1999). They are known to be synthesised
by plants in response
to microbial infection (Dixon and Lamb, 1983). They have been found in
vitro to be effective antimicrobial substances against a wide range of
micro-organisms. Their activity is probably
due to their ability to complex with bacterial cell walls, as described
for quinines. More lipophilic flavonoids may also disrupt microbial cell
membranes (Marjorie, 1999).
Catechins, the most reduced form of the C3 unit of flavonoid compound
have been found to be present in oolong green tea (Marjorie, 1999).
It was found some time ago that teas exerted antimicrobial activity
(Marjorie, 1999) and that they contain a mixture of catechin compounds. These
compounds inhibited in vitro Vibrio
cholera 01 (Borris, 1996) and Streptococcus mutans (Batista et al.,
1994). There is a considerable range of flavonol glycosides in plants. More
than 200 different glycosides of quercetin
alone have been described, of which by far the most common is quercetin
3 rutinose, known as rutin (Harborne, 1984).
Flavones occur as glycosides but the range of different glycosides is
less than in the case of flavonols.
More than one study has found that flavone derivatives are inhibitory to
respiratory syncytial virus (RSV) (Barnard et al., 1993, Kaul et al.,1985).
Flavone is one of the main groups of flavonoids, and the most widespread
flavone is quercetin serves as the backbone for other flavonoids, is the most
active of the flavonoids (Ikan, 1991).
Many medicinal plants have significant a quercetin content.
Quercetin behaves like auxins in stimulating the germination of wheat
seeds. The possible function of this colouring matter in insect-pollinated
flowers and edible fruits is to make
these organs more conspicuous in order to aid seed dispersion by animals
(Ikan, 1991).
Small quantities of quercetin may act as cardiac stimulants. It is used
to strengthen weak capillary blood vessels (Ikan, 1991).
Flavonoids are able to join together to form other flavonoids e.g.
catechin.
Catechins are monomeric flavonoids which, joined together, can form new
compounds;it is a yellowish amorphous solid. There are different types of
catechins and they bond together
in various ways to form different compounds with very different
characteristics. Two catechins joined together are called dimer and three
catechins bonded together a trimer and
so on up to oligomers and polymers. These new compounds are called
proanthocyanidis, or condensed tannins.
Oligomeric proanthocyanidins are oligomericflavonoids. These molecules
are found in the bark of pine trees (Wijesekera, 1991).
Catechin easily binds to proteins, blocking bacteria from adhering to
cell walls and thereby disrupting their ability to destroy them.
It decreases cholesterol level in blood and prevents LDL cholesterol
caused by oxidation, which prevents narrowing of blood vesselscaused by the
build-up of LDL cholesterol (Bishop
et al., 2005) Catechin is a useful component for the prevention and
treatment of substances that suppresses the immune system (Wijesekera, 1991).
It fights bacteria and viruses and prevents
influenza. It is an antioxidant.
Eigenschaften der Flavonoide:
Antioxidativ: Flavonoide binden die bei Stoffwechselreaktionen entstehenden aggressiven freien Radikale, welche Zellmembranen zu schädigen vermögen und somit den Alterungsprozess protegieren können.
Herz-Kreislauf-belebend:
Flavonoide führen zu einer Dilatation der Koronargefäße, was zu einer optimalen Ver- und Entsorgung des Myokards beiträgt. Positiv inotrope und negativ chronotrope Wirkungen am
Herzen führen zu einer Verbesserung der Kreislaufsituation. Dadurch, dass die Nierendurchblutung gesteigert wird, können Reststickstoffe (Harnstoff, Harnsäure, Kreatinin) besser
eliminiert werden.
Entzündung hemmend:
Flavonoide greifen hemmend in den Arachidonsäurestoffwechsel ein und supprimieren die Entzündungsmediatoren der Prostaglandinkaskade.
Gefäßabdichtend und ödemprotektiv:
Flavonoide steigern die Kapillarresistenz, reduzieren dadurch die Membrandurchlässigkeit und wirken so der Ödembildung bei der venösen Insuffizienz entgegen.
Antiparasitär:
Flavonoide wirken antiviral, antibiotisch und antimykotisch. Ihre Substitution kann zu einer Einsparung von Antibiotika führen.
Trombozytenaggregation hemmend:
Flavonoide verbessern die Fließeigenschaften des Blutes und damit die Mikrozirkulation. Dadurch, dass die Distanz zwischen den Thrombozyten vergrößert wird, kann der Thrombenbildung
und das damit verbundene Thrombenembolierisiko gesenkt werden.
Kanzeroprotektiv:
Durch die Radikalfängereigenschaften der Flavonoide kann Genmutationen entgegengewirkt werden, welche zu unkontrolliertem Wachstum der Zelle führen können, womit das Risiko, an
Krebs zu erkranken, gesenkt werden kann. Daher zählen die Flavonoide ernährungsphysiologisch zu den wichtigsten antikanzerogenen Substanzen. Flavonoide sind an grundlegenden
Vorgängen des Zellstoffwechsels beteiligt, ohne toxisch zu wirken. Sie verweilen nicht lange im Körper, werden schnell eliminiert und sind deshalb zur Langzeitanwendung bestens geeignet.
* Pheromonen gehören nicht zu den sekundären Pflanzenstoffen, da es lebensnotwendig für die Pflanze ist.
* Tannine (Tann-ac.)
Tannins by definition have the ability to react with protein, forming
stable water insoluble co-polymers (Harbone, 1998). They are of plant origin,
which through their ability to cross-link
with protein are capable of transforming raw animal skin into leather.
Plant tissues high in tannin content impart an astringent taste, which acts as
a deterrent to most feeders.
Tannins are divided into two groups,
hydrolysable and condensed tannins. Hydrolysable tannins are based on gallic
acid, usually as multiple esters with D-glucose while the condensed
Tannins are derived from flavonoid
monomers (Marjorie, 1999).
Tannins may be formed by
polymerisation of quinone units. Many human physiological activities, such as
stimulation of phagocytic cells, host mediated tumour activity and a wide range
of
anti-infective actions have been
assigned to tannins (Haslam, 1996). Their mode of antibacterial action is
related to their ability to inactivate microbial adhesions, enzymes and cell
envelope
transport proteins. They also form
complexes with polysaccharides. There is also evidence for direct inactivation
of micro-organisms.
Condensed tannins have been determined to bind cell wall of bacteria,
preventing growth and protease activity (Jones et al., 1994).
Tannins consist mainly of gallic acid residues that are linked to
glucose.

[Chemikalienunverträglichkeit (abgekürzt MCS vom englisch Multiple Chemical Sensitivity) ein Beschwerdebild
mit z.T. starken Unverträglichkeiten von vielfältigen flüchtigen Chemikalien [Duftstoffen/Zigarettenrauch/Lösemitteln/Abgasen (in jeweils niedriger Konzentration)].
Element Wasser scheint die Bildung von Gerbstoffen anzuregen.
Man glaubt, dass sekundäre Pflanzeninhaltsstoffe wichtige ökologische Aufgaben haben. Es wird angenommen, dass sich pflanzliche Sekundärstoffe als Folge einer intensiven Interaktion zwischen Pflanzen und ihrer Umwelt (Fressfeinden) entwickelt haben. Viele pflanzliche Sekundärstoffe dienen der Pflanze als effektive chemische Abwehrstoffe gegen Herbivoren und Pathogene. Andererseits locken Sekundärmetabolite als Farb- und Aromastoffe pollenverbreitende Insekten und samenverbreitende Früchtefresser an.
Pflanzen nutzen Sekundärmetabolite
* zur Abwehr von Pathogenen, z.B. Iridoide, Cannabinoide
* zur Abwehr von Herbivoren, z.B. Tannine, Iridoide, Phytosteroide, Pyrethroide, Alkaloide, Cannabinoide
* dem Schutz vor UV-Strahlung und Starklicht, z.B. Carotinoide, Flavonoide, Anthocyane
* zur Anlockung von Bestäubern und Samenverbreitern, z.B. Monoterpene
* als Verdunstungsschutz, z.B. Suberin, Cutin
* als mechanische Festigung, z.B. Lignine
Viele der Verteidigungsstoffe sind für die Feinde der Pflanzen giftig, sondern auch für die Pflanzen selbst. Um der Selbstzerstörung zu entgehen, haben sich in Pflanzen 3 wesentliche Strategien herausgebildet:
1. Substanzen häufen sich in besonderen Zellen o. Geweben an. So sammelt sich Harz zum Beispiel in den Harzgängen, Alkaloide werden in speziellen Haaren o. Schuppen gespeichert, und
sehr häufig reichern sich Sekundärmetabolite in der Vakuole an. Die Freisetzung der Substanzen erfolgt also erst bei Gewebezerstörung.
2. Die Pflanzen bilden nichttoxische Vorstufen und ein spezifisch dazu passendes Enzymsystem, das sich in anderen Kompartimenten der Zelle oder in besonderen Zellen befindet. Erst wenn
die Kompartimente sich durch Verletzung auflösen, kommen die Enzyme mit den Substanzen in Berührung und bilden die eigentlichen giftigen Abwehrstoffe. Beispiel: Alliin im Knoblauch.
3. Die Pflanzen bilden
Schutzstoffe nur als Antwort auf eine Infektion. Ihre Bildung beschränkt sich
auf den Ort der Infektion. Die Bildung wird durch besondere Signalsubstanzen (Elicitoren)
ausgelöst.
Anpassungen an sekundäre Pflanzenstoffe.
Trotz der raffinierten und vielfältigen Verbindungen haben sich immer wieder bestimmte Tiere an sie angepasst o. eine Toleranz dagegen entwickelt. Solche Tiere werden als Nahrungsspezialisten bezeichnet. Sie können die Inhaltsstoffe mit der Nahrung aufnehmen und für sich selber nutzbar machen, neutralisieren o. schlicht wieder ausscheiden. Manche Tiere sind in der Lage, mittels Sequestration giftige Substanzen im eigenen Körper zu speichern, um sich ebenfalls auf diese Weise vor ihren Fressfeinden zu schützen. Ein interessantes Beispiel dafür ist Danaus plexippus
(= Monarchfalter/=Wanderfalter), der Herzglykoside speichern kann. Diese Sekundärstoffe verursachen bei seinem Fressfeind, dem Blauhäher, Lähmungserscheinungen und Erbrechen.
Schon nach kurzer Zeit lernen die Vögel, die auffällig gefärbten Schmetterlinge zu meiden.
Sekundäre Pflanzenstoffe werden im naturheilkundlichem Bereich auch als Phytamine (Phyto = griech. Pflanze) bezeichnet, da einige von ihnen als Teil der Ernährung gesundheitliche Vorteile bieten.

Hemmung der Krebsentstehung z.B. Carotinoide in grünblättrigem Gemüse, Proteaseinhibitoren (in höherer Dosis giftig) in Kartoffeln, Nüssen, Getreide, Hülsenfrüchten; Granatapfel-Polyphenole wie Punicalagin, Ellagitannin, Crosmin, Gallussäure und Ellagsäure
antioxidativ Flavonoide, Liponsäure
hormonähnliche Wirkung Phytohormone, Phytoöstrogene.
Viele sekundäre
Pflanzeninhaltsstoffe sind für den Menschen giftig. Zu diesen natürlich
vorkommenden Giftstoffen (Alkaloide). Manche dieser natürlichen Gifte kann man
sich pharmakologisch zu Nutze machen wie das Gift der Tollkirsche Atropin, die
Alkaloide des Schlafmohns (Morphin, Codein, Papaverin, Noscapin): die
Diterpenoide aus Eibenarten (Taxol A = Paclitaxel).
